sweet treat

This year I decided to make macaroons for my coworkers. My plan was to actually make those and homemade marshmallows and chocolate peppermint cookies, but time, getting sick, and an upcoming house project got the best of me. And honestly, that probably would have been overkill. But I still wanted to do something for the people I love to work with.

I first made these for Allie's bridal shower. They were easy and oh so tasty. Since then, I have made them a few times with different variations. For this occasion I made some with orange zest and some with milk chocolate drizzled on top. If you like coconut, you will love these!

coconut macaroons

1 pkg shredded, sweetened coconut
2/3 cup flour
1/4 t. salt
1 can sweetened condensed milk (14 oz)
1 t. vanilla extract
1 t. almond extract
(this also works with 2 t. vanilla, if you dont have almond)

-In a large bowl, stir together coconut, flour, and salt
-In a separate bowl, mix condensed milk and flavorings
-Add to coconut and stir well
-Use a cookie scoop to drop on foil covered cookie sheet (I usually grease this as well)
-Bake at 350 for 10-15 minutes, until tops are beginning to brown

Thank you for posting this recipe. I never thought of myself as a big coconut fan, but these macaroons at Allie's shower won me over. They were delicious!

I love coconut... and anything made with sweetened condensed milk. I wish I could drink a large cup of that every morning for breakfast. :) Your macaroons are DE-LISH. :)
